Kale & Mushroom Mini Quiches with Cheddar

I’ve wanted to make a quiche for a few weeks now and finally found the perfect opportunity. Staring back at me tonight was an empty fridge with the exception of a carton full of eggs and semi fresh veggies. So I decided to take this moment to whip up a batch of crustless mini quiches. Who said eggs were only for breakfast? Ok, my boyfriend said this but I believe I have convinced him otherwise. I avoided any of those heavy cream recipes since I knew I would be dipping into the leftover Halloween stock (I couldn’t resist those little mini Wunderbar’s) and the results were fabulous.

The fun part about making a quiche is that you can throw anything and everything into the mix and your consumers will worship you nonetheless. I added a few bunches of kale that were definitely not going to be consumed before the weeks end and some mushrooms that I couldn’t part without. I was a bit sad that I couldn’t toss in a few bacon chunks but I overcame this moment of deprivation with a couple handfuls of shredded aged cheddar. These flawless personal sized pies are packed with vitamins and unshakable protein. I would highly suggest ingesting one or two of these quiches on your way to work, school, or for some of us…interviews. Yay for brain food!

Kale & Mushroom Mini Quiches with Cheddar
Prep Time: 20 mins
Cook Time: 30 mins

Tools Needed: large mixing bowl, measuring cups & spoons, 12 cupcake tin, whisk

Ingredients:
5 eggs
2 egg whites
1 cup milk
¾ cup grated cheddar cheese (a little extra to top off –optional)
6 mushrooms chopped
1 cup kale chopped
2 green onions chopped
Salt & Pepper
½ teaspoon of cayenne pepper
(Pam or butter for greasing)

Directions:
1) Preheat oven to 350 degrees. Grease 12 serving cupcake tin with Pam (or butter).
2) In a large mixing bowl, whisk eggs, egg whites, milk, cayenne and salt and pepper to taste. Mix in kale, mushrooms, green onions and cheese.
3) Pour mixture into cupcake tin and sprinkle with leftover cheese. Bake for 25-30 mins or until middle of quiches are set. Cool and serve. Makes 12 mini quiches.

Happy Dad’s Day! Crispy Bacon and Hash Brown Quesadillas

Last September in NYC, I had the honour to eat at the legendary Bobby Flay’s restaurant, Mesa Grill. It was one of the most memorable brunches I have ever encountered to date. Admitting, my not so discrete crush on Bobby is well deserved with an adventurous breakfast menu like so.  I was like a kid in a candy store, in awe at every recipe. The combinations of ingredients were incredibly daring and admirable, making it difficult to stop at two meals. Truthfully, I can still taste the apricot glazed ham steaks accompanied by goat cheese and jalapeno scrambled eggs. Bobby Flay is culinary genius, ‘nuff said.
Deciding what to serve for the number one man in my life, my daddy, was an easy decision. I chose to recreate Bobby Flay’s breakfast quesadillas. This is not a simple feat, but it is worth every minute of slavery. If you ever have a free Sunday morning to follow this recipe, you will not be disappointed but ensure that you have ample time to build this breakfast delight. The combination of homemade hash browns, thick cut bacon, fried egg, and tomato jalapeno salsa topped with goat cheese, is unforgettable. This meal is served best with a cold glass of Mimosa, and don’t forget the slice of orange!

Crispy Bacon and Hash Brown Quesadillas
Prep Time: 30 mins
Total Cook Time: 1 hour (onions, hash browns, bacon, complete quesadilla in the oven)
Tools Needed: 2 large frying pans, cutting board, knife, cheese grater, colander, slotted spoon, small mixing bowl, 2-3 baking sheets, spatula, medium boiling pot, plate, paper towel
Ingredients:
Hash Browns
2 large Idaho potatoes (scrubbed)
¼ cup of canola oil
2 large Spanish onions, halved and thinly sliced
Salt and freshly ground pepper
1 poblano chile (I used ½ jalapeno pepper chopped)
1 tablespoon of ancho chile powder ( I used Mexican chile powder)
Quesadillas
8 ounces of thick-cut bacon, diced
12 (6-inch) flour tortillas
2 ½ cups of grated cheese (Monterey jack or cheddar)
2 tablespoons of canola oil
2 teaspoons of ancho chile powder
2 tablespoons unsalted butter
4 large eggs
Salt and ground black pepper
Mixed Tomato Salsa (recipe below)
Grated cotija cheese for garnish (I used crumbled goat cheese)
2 green onions thinly sliced for garnish
Directions:
1) To make the hash browns, put the potatoes in a medium pot of cold salted water, bring to a bowl and cook until nearly tender but a knife inserted into the middle will meet a little resistance, 15-20 mins. Drain and let cool slightly, and then peel. Grate the potatoes on a grater using the large holes
2) Heat 2 tablespoons of the oil in a large frying pan, over medium heat. Add the onions, season with salt and pepper, and cook, stirring occasionally until golden brown and caramelized, 15-20 mins. Scrape the onions out of the pan onto a plate
3) Return the pan to the stove over high heat and add the remaining 2 tablespoons of oil. Add the potatoes and cook, stirring occasionally, until golden brown (12-15 mins). Stir in onions, poblano, ancho powder, salt and pepper to taste. Remove from the heat. Preheat the oven to 425 degrees F
4) Place the bacon in a large frying pan over medium-high heat and cook, turning once until crisp (8-10 mins). Using a slotted spoon, transfer the bacon to a plate lined with paper towels to drain. Discard bacon fat and wipe pan with paper towel
5) To assemble the quesadillas, place 6 tortillas on baking sheets. Divide the cheese, hash browns, and bacon among tortillas. (Bobby Flay now says to make 2 layers, but I made only 1 layer and was filling enough!) Cover each with one of the remaining tortillas. Brush the tops with the oil and sprinkle with ancho powder. Bake until golden brown and cheese has melted (8 mins)
6) While quesadillas are baking, fry the eggs. Return to large frying pan that you cooked the bacon in on to medium heat and melt butter. Carefully crack eggs into the pan, season with salt and pepper and cook until the whites are completely firm but the yolks are still soft (2-3 mins)
7) Transfer the quesadillas to plates and top each egg with a fried egg, add some of the mixed tomato salsa, and garnish with cotija cheese and green onion
Mixed Tomato Salsa
Prep Time: 10 mins
Tools Needed: Medium mixing bowl, cutting board, knife, spoon
Ingredients:
1 pound of heirloom tomatoes diced (or cherry tomatoes)
1 jalapeno chile, finely diced
2 cloves of garlic, finely chopped
3 tablespoons balsamic vinegar
1 teaspoon honey
3 tablespoons olive oil
1 tablespoon finely chopped fresh Mexican oregano (1 teaspoon dried)
3 tablespoons finely chopped fresh cilantro
Salt and freshly ground pepper
Directions:
1) Combine all ingredients in a medium mixing bowl and season with salt and pepper. Let sit at room temperature for at least 15 mins before serving

The Perfect French Toast

My favourite meal of the day is breakfast, hands down. It is whole heartedly good and always leaves you energized for your day of planned activities. In my case, unplanned activities as I am on vacation and loving every minute of it. Sleeping in, knowing that there is no particular place you need to be…being able to roll out of bed whenever you feel like it, minus the dreadful sound of your alarm clock, it’s just priceless. This morning the sun was lightly peering through my blinds, waking me with a sudden craving for French Toast.  My sister has been begging me for a while to post a simple yet tasty French toast recipe, so here it is:
The first rule in making French toast is: keep it simple. You can go all crazy and start adding cream instead of milk or a splash of orange juice, but I suggest sticking to the basics and enjoying its perfection. The second rule in my French toast experience is to use Challah Bread (egg bread). It is extremely soft and has a light sweet eggy flavour that tastes wonderfully battered and lightly fried in butter. Which brings us to the final rule: there is no substitute for butter. Don’t punish your meal by using a cooking spray. Enjoy these calories guilt free…and maybe substitute that lunch with a salad!

The Perfect French Toast
Prep Time: 5 mins
Cook Time: 15 mins
Tools Needed: medium mixing bowl, measuring spoons and cups, whisk, large electric frying pan (or large pan), spatula
Ingredients:
1 cup of milk
5 large eggs
½ teaspoon of ground cinnamon
½ teaspoon of vanilla
Pinch of salt
Butter for frying
12 slices of Challah Bread (egg bread)
Icing Sugar
Maple Syrup
Directions:
1) In a medium bowl whisk milk, eggs, cinnamon, vanilla and salt together
2) Turn large electric pan onto 350 degrees (or frying pan to medium low heat) and melt a pad of butter across the pan
3) Dip bread into mixture making sure to get both sides, drop onto pan and turn after 2-3 mins of cooking, repeat until batter is complete
4) Sprinkle icing sugar on top and drizzle maple syrup. Serve with fruit. Makes 12 servings of French Toast

Saturday Morning Sunrise: Caramelized Apple and Cheddar Cheese Crêpes

I love Saturday mornings because it means that I still get one more sleep-in before work starts again. I love the first morning sun creeping through the blinds, gently reminding you that spring is around the corner. I love waking up to a house full of people ready to make a big hungry-man breakfast, and more than anything, I love the first sip of my citrus vanilla tea. Hmmmm…Saturday mornings. They’ve evolved so much since we were kids, yet stayed exactly the same. Still satisfying, but the cartoons just aren’t the same. The creative animated geniuses out there might still be asleep, but the foodies in this household are awake and hungry.
Breakfast is my favourite meal of the day. It is so satisfying and provides you with energy to face the day ahead. I still cannot understand how people skip this extremely critical meal. I actually can’t think straight if I don’t eat first thing in the morning, or hourly. So when my sister rolled in this morning bragging about the crêpes she had made last night with her buddies, I was instantly salivating. I want crêpes! Delicious warm and sweet crêpes stuffed with something delicious and a hint of salt. Yes…crêpes it is. I had a few left over apples and a small chunk of extra old cheddar cheese left, so why not? My darling sister lent her crêpe making expertise and I obediently followed her lead while caramelizing my apples for this easy and quick breakfast. I layered the apples over the warm crêpe and added a few slices of extra old cheese. The lightly sweet and bitter flavours from the apples mixed with the salty strong tastes of the cheese teases the palate like no other. Drizzle some pure maple syrup on top of this morning delish, and voilà! A no stress, no mess, little taste of Paris!

Caramelized Apple and Cheddar Cheese Crêpes
Prep Time: 15 mins
Cook Time: 20 mins
Tools Needed: 2 medium frying pan, medium mixing bowl, ladle, measuring cup, knife, peeler, cutting board, whisk
Ingredients:
2-3 apples
1 tablespoon of brown sugar
1 tablespoon of butter
8 slices of cheese
1 cup of all-purpose flour
1 cup of milk (give or take)
¼ cup of granulated sugar
Pinch of salt
1 egg
Pure Maple Syrup for drizzling
Directions:
1) Peel and cut apples into thin slices. Cut cheese slices and put to the side. (If you prefer grated cheese, go right ahead!)
2) Melt butter on pan in medium heat and add apples, caramelizing with brown sugar. Cover and set aside once softened.
3) Whisk flour, sugar, salt and milk in bowl making sure that the consistency is not too thick and not too liquid (add milk if needed)
4) Melt small pad of butter in pan on medium heat and drop 2/3 of a ladle in pan, making sure to twist pan so batter is equally distributed and thinned out (as thin as possible). Cook on each side for approx. 2 mins, ensuring does not burn, flipping once golden brown. Remove and put on plate. Continue until all batter is completed.
5) Spoon apples into center of crêpe and top off with cheese. Flip one side of crêpe over and roll closed. Drizzle with maple syrup and serve! (The batter makes 10 crêpes, but I suggested filling for 6 crêpes. You can increase the apples for more filling!

Welcoming Spring with open arms and a bowl full of: Mango and Blueberry Cobbler

I think it’s safe to say that Spring might finally be here. I heard the birds chirping on Friday morning when I was definitely not feeling chirpy at all, and it brought a little song to my heart. I know it sounds cheesy but I have been waiting four long months to hear those little sounds of harmony. My roommate / best friend and I decided to get back into our little tradition of baking and wine, by making one more health conscious dessert: Mango Blueberry Cobbler.
The thing about Mel is that she has the fastest metabolism I have ever seen. This woman can eat a full sugar pie to herself and still have room for a medium pepperoni and cheese pizza. It’s actually remarkable how she does it. Needless to say, she was really looking forward to this cobbler. I have to admit, I didn’t quite tell her that this was a no bake, raw foods dessert that I had stumbled upon, because I knew her interest would dwindle. And I was right! She was a bit disappointed, and kept nagging me, “next time we are baking real cupcakes right?” But when it came time to slicing this baby up, she couldn’t keep her filthy little paws off them! Crunchy pecans, sweetened and glued together by gooey dates, fresh lively flavors from the bright orange mangos and light bursts of firm blueberry’s, all blended together to provide an amazing energizing dessert or breakfast. It is so freaking good, I am telling you! You won’t notice that it is sugar, flour, butter and bake free!

PS. I have adapted this recipe to my liking by using real maple syrup instead of making the syrup suggested. I also added blueberry’s and subtracted the vanilla bean. Feel free to use any fruit you want, but if you choose Mango’s, ensure that they are sweet and ripe.

Mango Blueberry Cobbler
(adapted from: Ani's Raw Food Kitchen)
Prep Time: 30 mins
Cook Time: ---
Tools Needed: cutting board, knife, food processor, 9 x 9 baking dish, medium size bowl, big spoon, measuring cup, measuring spoons
Ingredients:
3 cups of pecans
¾ teaspoon of salt
¾ cup of pitted dates
½ teaspoon of vanilla
4-5 ripe mangos
1 cup of blueberries
1 tablespoon of coconut oil melted (optional, I just love the island flavor)
2 tablespoons of pure maple syrup
Directions:
1)      Crust: process dates, pecans, salt and vanilla in food processor until crumbly and spread half the mixture at the bottom of the baking dish
2)      Filling: peel and cute mangos into slices and into medium size bowl. Add blueberries, coconut oil, syrup and toss until all covered. Spoon onto crust and top off with remaining crust mixture. Keeps in fridge for 2 days. Enjoy J
